Here is a recipe that I make for tea with my mom, which she loves to do when she is in town, or for the teachers’ breakfast at my kids’ school. It’s always a big hit for any event. It features Baking Mix for us busy Moms and the Lemon Extract is what makes this recipe a favorite with everyone.
Heat over to 425 degrees
2 cups Baking Mix
1/2 cup Milk
1/3 cup Raisins
1 teaspoon ground cinnamon
Still all ingredients together until a soft dough forms. Drop by spoonfuls onto an ungreased cookie sheet. Bake 10 -12 minutes until golden brown. Makes 9 biscuits.
2 cups powered sugar
1 teaspoon Lemon Extract
2 tablespoons of Milk – and add by the tablespoons as needed
Still until smooth. When biscuits are cooled, spread or drizzle onto biscuit.
Note: Vanilla can be substituted for the Lemon Extract in the glaze, but the Lemon Extract gives the glaze a nice crisp flavor.
